Beer-Brined Grilled Pork Tenderloin
Makes 15 servings
Ingredients
5 cups water
5 cups dark lager beer
¾ cup coarse salt
5 TBS (packed) dark brown sugar
5 TBS mild-flavored (light) molasses
3 cups ice cubes
3 LB pork tenderloin, trimmed
Directions
1. Combine 2 cups water, beer, 1/4 cup coarse salt, sugar, and molasses in large bowl. Stir until salt and sugar dissolve. Stir in ice.
2. Place pork tenderloin in large re-sealable plastic bag. Pour beer brine over pork; seal bag. Refrigerate 4 hours, turning bag occasionally.
3. Prepare barbecue (medium-high heat). Remove pork chops from beer brine; pat dry.
4. Grill pork tenderloin until instant-read thermometer inserted into center of chops registers 145°F to 150°F, about 10 minutes per side, occasionally moving pork to cooler part of rack if burning.
5. Transfer tenderloin to platter; cover with foil, and let stand 5 minutes before slicing and serving. We suggest pairing this with some grilled new potatoes and a vinegar-based slaw.
